By spending many months researching indigenous fruits, vegetables and spices used in different countries, along with recipes and styles of cooking I have tried to create my own recipes with the aim of bringing to life the variety and vibrancy of these countries, as well as awareness of the problems these countries are now facing and what if anything we can do about it.
