Thursday’s Chicken Teriyaki

Mid-week sorted with my oven cooked Chicken Teriyaki, so quick to make and low fat too as cooking straight in the oven so no need to fry first…

Serves: 4

Prep: 10mins
Cook: 1h 30mins

Ingredients: 3 skinless chicken breasts, 1 large green pepper, cup of orange juice, 3 tbsps. shop bought Teriyaki sauce (I used Clearspring), 2 tbsps. runny honey, 2 garlic cloves, 1 tbps. of flour, handful of cashew nuts and fluffy white rice to serve.

Method:

  1. Preheat oven to 150CFan
  2. Get an oven proof lidded dish/pan ready
  3. Assemble all of your ingredients except the cashew nuts and chop the chicken and pepper into bite sized pieces and add to the pan
  4. Thinly slice your garlic and mix with the chicken and peppers
  5. Whisked together the orange juice, honey and Teriyaki sauce and pour over the chicken
  6. Pop in the oven lid on and cook for 1h and 15mins
  7. After this time take the lid off and sprinkle over 1 tbsp. of flour, mix well, add your cashews and pop back in the oven, lid on for 15mins
  8. Once ready serve with fluffy white rice and enjoy!

As a three person household we had enough leftovers for a little ones lunch box too. I just let the rice and chicken cool, steamed some broccoli and mixed together with some of the sauce, topped with slices cucumber for a little Teriyaki rice salad lunchbox – yummy!

Japanese Lunch Pancakes

Makes: 12 slices

Prep: 5 mins
Cook: 10 -15 mins

Ingredients: 6 eggs, 4 florets of brocolli thinly sliced, handful of watercress, 1 heaped tbsp. of rice flour, 2 tsps. soya sauce, 1 garlic clove thinly sliced, 1 chopped chilli, 1/2 tsp. of dried ginger, 1/2 tsp. baking powder, 1 tbsp. of oil for cooking

Optional Sauce: 2 tbsps. of tomato sauce, 1 tsp. of runny honey, 2 tsps. of Worcestershire sauce mixed together,
salad cream, seasame seeds.

Method

  1. Beat your eggs, then add the rice flour and baking powder and mix again
  2. Add the garlic, ginger and chilli mix well then stir in all your veg
  3. Heat the oil in a large frying pan and add your egg mixture
  4. Cook for 10 minutes or more on a medium heat until the pancake is set
  5. Slide off onto a large plate and drizzle over sauce and sesame seeds if using
  6. Cut into 12 slices and enjoy!

FYI You can substitue the veg for whatever you have in, peppers, sweetcorn, spinach, cauliflower etc.

Vegan Oven Roasted Spicy Aubergines with Spicy Green Lentils

Friday night is a good excuse for a curry night right? Check out this delicious vegan recipe for some healthy inspiration.

Serves: 4

Prep: 10 mins
Cook: 45 – 60 mins

Ingredients: 1 white or brown onion, 2 large aubergines or 4 baby aubergines, 1 cup of green lentils, 2 cups of coconut milk, 1 veggie stock cube, 1/2 tsp of cumin, 1/2 tsp of turmeric, 1 chopped red chilli and 1/2 tsp of dried ginger, 4 tbsp of oil, 1 tsp. of masala paste.

Method: 

  1. Preheat the oven to 200F
  2. Chop your onion and garlic and fry in a pan with 1 tbsp of oil for a few minutes until softened
  3. Add all of your dried spices and chilli and coat the onions and garlic well
  4. Add the lentils with 2 cups of coconut milk and 3 cups of veggie stock and give it a good stir
  5. Bring to the boil and then turn down to a simmer until the lentils are soft, you may need to add some more liquid and give it the occasional stir
  6. While the lentils are cooking, mix the masala paste with 3 tbsp. of oil
  7. Cut the aubergines in half lengthways, criss cross the flesh and place on a baking tray flesh side up
  8. Brush the masala oil all over the flesh and pop in the oven for 30 – 45 mins until soft
  9. Once the aubergines and lentils are cooked serve up on a fluffy bed of basmati rice, lentils first then the aubergines on top
  10. Enjoy!

Tip: I used the same cup to measure the lentils and liquids to make sure I get the right measurements. 

Eat Your Greens Super Speedy Stir Fry

Make sure you eat your greens this week with this super speedy vegan stir fry that you can add to anything, rice, pasta, noodles etc, the sprinkling of brown sugar right at the end really adds something to the greens!

Serves: 2 – 4 depending on what you are serving it with

Prep: 2mins

Cook: 6mins

Ingredients: A bag or bunch of greens such as chard, kale, spinach, watercress, pak choi, (some types of cabbage might work too), 1 garlic clove, 1 red chilli (you can used dried chilli and frozen or pureed garlic), tbsp of oil, sprinkling of brown sugar and sesame seeds.

Method:

1. Chop up your garlic and chilli and heat in the oil for a few minutes

2. Chop or tear your greens and add to the pan, stir well to coat in the oil

3. Stir fry for a minutes more then sprinkle with brown sugar and sesame seeds

4. Enjoy!

Japanese Style Slow Cooked Turkey Leg with Red Wine and Miso

Looking for something different this week? Remember turkey isn’t just Christmas with this Japanese style, slow cooked turkey leg with umami flavours!

Prep: 5mins
Cook: 3 hours

Ingredients: 1 large turkey leg, (male if you can get it, as it’s even bigger), 1/2 a bottle of red wine, 1 heaped tbsp. of white miso paste, 2 tsps. Sesame seeds 4 peeled garlic cloves, 2 star anaise, 2 cinnamon sticks.

Method:

  1. Preheat oven to 130F
  2. Make some slits in the skin of the turkey
  3. Pop the turkey leg into a deep lidded, oven proof pan
  4. Add to the pan the rest of the ingredients, making sure to pour some over the top of the turkey
  5. Put the lid on and cook in the oven for 1.5 hours
  6. Take the turkey out and baste
  7. Pop back in the oven for a further 1.5 hours
  8. Allow the turkey to rest and serve with juices from the pan, which makes a great gravy
  9. Enjoy!

Goes well with your choice of veg, rice, noodles and even roast potatoes. 

 

Celebrate Chinese New Year with Five Spiced Whole Roast Chicken

Celebrate Chinese New Year with a comforting, nourishing bowl of chicken, broth, veggies and rice, all gently spiced in authentic Chinese flavours.

Serves: 4 – 6 maybe with some leftovers too!

Ingredients: 1 whole chicken, 2 cinnamon sticks, 4 cloves, 2 star anise, 2 garlic cloves, 1 tsp. fennel seeds, 1 tsp. peppercorns (green/black or szechuan pepper if you can get it), 1 large carrot or two smaller ones, cut into chunky batons, 2 celery sticks cut into batons and 1/2 tsp. of sea salt.

Method:

  1. Pop all your ingredients into a large lidded pan (big enough to fit a whole chicken!), pop the chicken on top, breast side up
  2. Top up with water, until you the covering the chicken
  3. Bring to a rolling boil and then simmer with the lid on for 1 hour
  4. Turn the chicken over and cook for a further 20mins
  5. Remove the chicken and vegetables from the pan and cook on a high heat for 10minutes to reduce the stock down and intensify the flavour
  6. Cook your rice or noodles if serving with the chicken
  7. Carve your chicken and serve on a bowl or rice or noodles with the veg and pour the stock over
  8. Can season with sesame oil and soy sauce if you wish
  9. Enjoy!

I hope you have enjoyed our culinary trip this year and have got to try a few of the recipes too, it’s been a real journey for me and I have learnt a lot about other places I wouldn’t have had I not started this project -researching ingredients, cuisines, methods of cooking, and traditions from around the World.

 

Through our shared love of food, I also hope FeastforFamine has helped raise awareness of the struggles children face day to day around the World.

Together we have raised £1,182.34, which has already started to help provide a better future for children in the UK and overseas and with the monies raised we have helped support the work needed to improve the education, health and rights of children everywhere, so a huge thank you to everyone who has shown their support to my year of fundraising.

The Party Season has definitely started in our house, so if you are entertaining this December and looking for some tasty treats with mainly freezer and store cupboard ingredients then have a go at the tasty puffs! 

Makes: 26

Prep:20 mins
Cook: 15mins

Ingredients: 460g ready made puff pastry, 250g frozen shrimps/prawns, 4 tbsp. of mayonnaise, 2 heaped tbsp. of tinned sweetcorn, 2 tbsp. toasted sesame seeds 2 tbsp. sweet chilli sauce, 1 small bunch of spring onions or chives thinly sliced, 1 tsp. dried ginger, a little oil for frying.

Method

  1. Pre-heat your oven to 160F
  2. Using a pastry cutter or a cup, cut out 26 circles in your puff pastry, prick with a fork and add to a lined baking tray
  3.  Cook in the oven for 15mins until golden and puffed up
  4. Take out and leave to cool
  5. To make the prawn filling, fry your prawns in a little oil to remove any excess water, allow to cool
  6. Make the prawn sauce, by mixing together all of the remaining ingredients, except the sesame seeds and add the cooled prawns
  7. Take each of the little puffs and using the back of a spoon bash the top a little to make a small hole in each
  8. Fill the hole with the prawn mixture and finish off with a sprinkling of the sesame seeds
  9. Enjoy!

Mid Week Mushroom Madness: Vegan Buckwheat Soba Noodle Salad with Enoki Mushrooms Braised in Miso, with Avocado and Seasame Dressing,

Hi All,

Having recently got back from Japan, as a foodie, I am REALLY missing it, so was very excited when visiting my local supermarket to find some enoki mushrooms and felt inspired.

I have a cupboard at home that I try and keep stocked up with lots of different flavours from around the World so with the help of ingredients I already had, was pleased to be able to come home and rustle something up for lunch today that really hits the spot; Buckwheat Soba Noodles with Enoki Mushrooms Braised in Miso, with Avocado and Seasame Dressing, and here is the recipe – enjoy!

Serves: 2

Prep: 10mins
Cook: 14mins

Ingredients: 2 person serving of buckwheat soba noodles, 1 avocado, punnet of enoki mushrooms, tsp. of white miso, 2 tsp. of sesame oil, 2 tsp. of brown rice vinegar, 2 tsp. soya sauce, 1 heaped tsp. of Korean red pepper flakes.

Method:

  1. Cooked the noodles as per instructions, then place into cold water, drain and set aside
  2. Pop the mushroom with 1 tsp. of white miso into a pan with a little water and simmer for 10mins
  3. Meanwhile chopped your avocado into chunks and mix into the noodles with the sesame oil, brown rice vinegar and soya sauce
  4. When 10 minutes are up, take your mushrooms off the heat and place into very cold water for a minute to stop cooking process and drain completely
  5. Mix the drained mushrooms into your noodle mix and sprinkle the Korean red chilli flakes over the top
  6. Dig in!

Inspired by Sri Lanka – Prawn and Yellow Lentil Curry with Cheats Pol Sambola

Luckily the oven roasted spice mix makes enough for two curries, as you will want to make this again and again! Filling, earthy flavours with the added zing of the ‘Cheats Pol Sambola’ to really tickle your tastebuds.

Serves: 2, or 4 if you add rice

Prep: 30 mins
Cook: 30 – 40mins

Ingredients: For the Sri Lankan Spice Mix, 1 tsp. black peppercorns, 1 tsp. cumin seeds, 2 tsp. mustard seeds, 2 tsp. fennel seeds, 2 tsp. coriander seeds

For the lentils: 1 cup of red or yellow lentils, 3 cups of cold water, 2 cloves, 1 cinnamon stick

For the curry: 1 can of full fat coconut milk, 12 – 16 King Prawns (depending on size and how many you want!), 2 garlic cloves, 1 thumb sized piece of ginger peeled, 1 red chilli, 1 tsp of coconut oil, (can use vegetable oil), 1 tsp. tumeric

For the ‘Cheats Pol Sambola’: 1/2 small red onion finely sliced, 1.1/2 tbsps. of natural desiccated coconut, 1/2 tsp. of dried chilli flakes (more of less depending on how much heat you like), juice of 1/2 a lime, 1 tsp. fish sauce.

Method:

  1. First pre-heat your oven to 200F, place all of the spice mix spices in a roasting tin and roast for 8-10 minutes until starting to brown
  2. Rinse your lentils and add to a pan with 3 cups of cold water, the cloves and cinnamon stick
  3. Bring to the boil and then simmer for 10-15mins until softened, drain and remove the cloves and cinnamon stick and put to one side until ready to use
  4. Now make your ‘Pol Sambola’, by mixing all ingredients together and then placing in the fridge until ready to use
  5. Once your spices have cooled a bit give them a good bash in a pestle and mortar or a quick blitz in a food processor
  6. Heat the coconut oil in a large pan and add the garlic, chilli, turmeric and ginger, fry for a few minutes then add half of your spice mix, save the rest in an air tight container for another time!
  7. Fry for a further 2 – minutes before adding the cooked lentils and coating well in the mixture
  8. Add the coconut milk and simmer for 10mins
  9. Add your prawns and cook for a few minutes longer to heat through
  10. Serve with ‘Pol Samba’ and enjoy!
